Although interest in soyfoods is rising in the U.S., due partly to recent discoveries about the health benefits of soyfoods, the soybean has been cultivated in China for more than 5, 000 years. Textured soy protein (TSP) usually refers to products made from textured soy flour. Textured soy flour is made by running defatted soy flour through an extrusion cooker, which allows for many different forms and sizes. When hydrated it has a chewy texture. It is widely used as a meat extender. TSP has a texture similar to ground beef or other meat products and must be rehydrated with boiling water before use. Textured soy flour contains about 70 percent protein and retains most of the bean's dietary fiber. Often referred to simply as textured soy protein (TSP), textured soy flour is sold dried in granular and chunk style. TSP is 100% defatted soy flour. American Soybean Association: Textured soy protein (TSP) is made wholly from either defatted soy meal flakes or soy protein concentrate. TSP is used in a wide variety of foods, for example, as an ingredient with ground meat for patties, sausage, and meat loaf; and in vegetarian foods and stews. This product can also be fortified with various micronutrients and minerals. It is available in as either a mince/crumble or chunk form. The former is similar in texture to ground beef, while the chunks resemble cubed meat used in stews. It is a dry product, easily rehydrated and takes no additional cooking time when used as an ingredient in another dish. Shelf Life: The functional properties of TSP are estimated to remain excellent for one year. The nutritional quality of the product is excellent for several years. Flavor changes can occur when TSP is stored under adverse conditions for periods longer than one year. Storage below 75 degrees F and 60 percent relative humidity will promote longer shelf life.
